An elegant, refined and light dish: try my seabass skewers

Who says healthy food cannot be flavorful, has clearly never tried this seabass skewers. This recipe is, in fact, a great example of how to prepare a dish that not only will be mouthwatering, but also allows you to stay healthy.
You will need just few ingredients, and you will have a wonderful dish, perfect for parties, brunches, and summer dinners.

Seabass in Italy comes mainly from farming, but sometimes you can find wild seabass. I try to buy sustainable fish as mush as I can, so when this kind of fish is not available I look for other fish in season. Asi with vegetables, fish has its seasonality too. Buying fish that has been caught in the right season means less resources used and more taste.

Basically you can use the fish you prefer like salmon, cod, grouper, snapper, you name it. I would choose a fish with firm flash, they’re easier to cut into bite-size pieces.

Fish is a good source of healthy fats. In particular wild caught fish. Just try to buy fish from sustainable sources. Bigger fish usually have also a larger quantity of mercury so try to use small ones, possibly locally sourced. Depending on the type of fish you buy, you can get more or less good fats. In any case, you’ll get very high quality protein in your meal.

When paired with some vegetables and good carbs, like a sourdough bread or a nice boiled rice, fish like seabass can provide a balanced meal. Many think you need to eat a lot of fish to reap the benefits of the nutrients contained in it, however a small serving twice or three times a week is good enough.

Now let’s prepare our skewers!

Ingredients for four servings

  • 2 sea-bass (or sea bream) fillets per person ( about 250gr)
  • 80 gr of breadcrumbs
  • salt and pepper
  • 1 grounded garlic clove or dried grounded garlic
  • parsley
  • 2 tbsp of extra virgin olive oil

How to prepare seabass skewers

Step 1
Simmer the wooden skewers for at least 20 minutes in water, so they will not burn in the oven. Preheat the oven at 200°C

Step 2
On a large plate pour the breadcrumbs, chopped parsley, garlic, salt and pepper. Chop the fillets into bite size pieces.

Step 3
Skewer the fish and coat it evenly with the mixture. Spread the oil on a baking tray and line the skewers on in.

Step 4
Cook in the oven for about 10/15 minutes. They’re ready when they are golden brown. Serve on a plate with  roasted bell peppers or marinated eggplant or a nice green salad.
